A Grain Rain spring cake. The Ming dynasty Record of Tea says: “Qingming is too early, Lixia too late; around Grain Rain the time is right.” Rain-fed buds, fat and soft — a fresh, lively cake that rewards patience in the wrapper.
The name is the Buddhist term for things as they truly are: “True suchness has no self; without self, all is true suchness.”
